DELICATA SQUASH
EASY SHEET PAN DINNER

Dear Friend,
Oh my goodness delicata squash is absolutely my favorite fall food!  It only comes out for such a short season and it is sensational roasted! It looks like a long yellow squash with green stripes. You just need to scrub the outside, scoop out the seeds, and cut it into half moon pieces to roast.  You can absolutely eat the skin and the squash has such a wonderfully sweet taste.

This recipe was created out of my love for delicata squash and needing an easy dinner that could also use up a bunch of ingredients I had left over in the fridge.  Feel free to swap out any of the ingredients below and make this a great go to fall family dinner.   I hope you enjoy this recipe has much as we do and welcome your comments!  You can also like my FB page to follow my family's current healthy lifestyle journey!

DELICATA SQUASH EASY SHEET PAN DINNER RECIPE 

INGREDIENTS: 
* 1 package Turkey Sausage  of choice (4-5links, TJ apple turkey sausage is super yummy in this!)
* 1 Delicata Squash
* 1 Zucchini
* 2 big Carrots (I love using TJ Organic rainbow carrots for this!) 
* 2 stalks of Celery
* 2 TBSP Coconut Oil
* salt & pepper to taste
* OPTIONAL: chopped fresh cilantro (used 1/2 a bunch in this picture), fresh or dried oregano

STATS:
Serves 4

DIRECTIONS:
1. Pre-heat oven to 350 degrees.
2. Scrub and clean the outside of the delicata squash. Cut off the ends, slice long ways in half, and scrap out the seeds. Cut the squash into half moon slices.
4. Slice the carrots, celery, sausage, and quarter slice the zucchini.  Chop fresh herbs if using. 
5. Combine all ingredients on a sprayed or lined baking tray. Toss everything with the coconut oil, salt, and pepper. Spread out on pan.
6. Bake for 20 minutes, then flip and stir. Bake for another 10 minutes (or until the squash is softened).  Enjoy!
