​RASPBERRY ALMOND PANCAKES


A Special Note From Michelle ...

Dear Friend,
Our family loves pancakes! This recipe is a spin on one of our staple recipes to create a fun color and flavor for special occasions.  Perfect for Valentine's Day, Mother's Day, Easter, a Lady's get together or really anytime.  They are gluten free, dairy free, and have the perfect balance of carb, protein, sweetness, and healthy fat.   This recipe uses less than a serving of gluten free oats per person, 1 egg per person, raspberries and banana providing natural sweetness, and a little ghee(clarified butter) giving amazing flavor.  The recipe makes about 12 pancakes, at only 60 calories per pancake.  We throw all the ingredients in our Vitamix (or blender) and have these pancakes cooked in no time. Since the pancakes are naturally sweet our kiddos have gotten use to eating them without syrup.  Not something you have to do, but letting you know this habit is definitely possible, it's all what you are use to : )  I hope you enjoy this recipe as much as we do and if you try it out I would love to hear your thoughts using the connection area below!

HEART HEALTHY RASPBERRY ALMOND PANCAKES RECIPE 

INGREDIENTS:
1 cup of Oats 
6 TBSP Almond Milk or Milk of Choice 
3 Eggs 
1/2 Banana 
3/4 cup Frozen or Fresh Raspberries 
1 1/2 tsp Ghee, Butter, or Coconut Oil 
1 1/2 tsp Almond Extract
1 TBSP Baking Powder
1 crank Sea Salt

NOTES:
This recipe is the perfect amount for 3 people, but can easily be divided by 3 to make pancakes for 1.  If you did this I would just use 1/4 of a banana.  Also, if you have a nut allergy or just don't have almond extract right now you can absolutely just use vanilla extract (of course they would now be Raspberry Vanilla pancakes : ).

STATS:
The whole recipe has 715 calories and makes about 12 (1/4 cup pancakes).  Each pancake has 60 calories, 4 pancakes having only 240 calories.

INSTRUCTIONS:
Combine all ingredients in a blender or Vitamix.  Use 1/4 cup measuring cup to make pancakes on a hot griddle or pan. To make the heart shape pour out the batter as if writing the letter V.  If the shape is a little off after you pour it, you can quickly smooth or shape batter with the end of a spoon.  Enjoy!
