Dear Friend,
I have to tell you I have never been much of a rice person (love love noodles though), however since discovering cauliflower rice I am now hooked! Trader Joe's carries incredible fresh and frozen cauliflower rice that seriously tastes just like course brown rice in recipes. When my mom first had one of my cauliflower rice dishes for the first time she had no idea it wasn't real rice! So incredible! With my new found love of cauliflower rice I went to town creating a collection of new clean eating recipes infused with some of our favorite flavors. PIZZA SUPREME CAULIFLOWER RICE RECIPE
INGREDIENTS:
1 85% Grass-Fed Ground Beef (I love the kind in the frozen section of Trader Joe's)
2 bags of Cauliflower Rice (1 lbs each)
1 large Onion
1 lbs bag of Frozen Peppers (I love the colorful medley that Trader Joe's carries)
1 jar of Tomato Sauce (Look for one that is low sugar, I use a Trader Joe's Organic one that has 50 calories a serving)
1 tsp Chopped garlic (fresh or jar)
1 cup Almond Cheese (This is a non-dairy alternative, feel free to use any cheese of choice)
STATS:
Makes about 6 servings (2 cups each)
~ 304 CALORIES, 24 GRAMS PROTEIN, 14 GRAMS FAT
~ 21DayFix: About 1 Red, 1+ Green, 1 Blue
INSTRUCTIONS:
Brown and strain the ground beef. Add all other ingredients except the cheese. Sauté ingredients until warm and softened. Stir in cheese, allow to melt, then ready to serve. Enjoy!
