Have you ever bought Tahini? It has an amazing taste and is one of the key ingredients in hummus. Tahini kind of has the consistency of natural peanut butter and is made from ground sesame seeds, below I have attached an article about it. Most grocery stores now carry it and I absolutely love Trader Joe's brand. The following dish is packed with color and nutrition. It could be a wonderful side or even served on lettuce as part of a salad. TAHINI KALE SPAGHETTI SQUASH RECIPE
INGREDIENTS:
1 Spaghetti Squash
1/2 a bag of Fresh Kale
1/2 lb TJ Mini Multi Colored Heirloom Tomatoes
2 TBSP Tahini
2 tsp Minced Garlic
1/4 cup Chicken Broth
Sea Salt & Pepper Grinder to taste
STATS:
There is about 550 cal in the whole recipe and it makes a good amount. I would say 6 servings is a fair average, equally about 92 calories a serving.
INSTRUCTIONS:
1 Spaghetti Squash
1/2 a bag of Fresh Kale
1/2 lb TJ Mini Multi Colored Heirloom Tomatoes
2 TBSP Tahini
2 tsp Minced Garlic
1/4 cup Chicken Broth
Sea Salt & Pepper Grinder to taste
STATS:

INSTRUCTIONS:
- Pre-heat oven to 400 degrees.
- Cut spaghetti squash in half long ways. Scrape out the seeds. Roast on a baking sheet with halves face down about 40-50 minutes. You know it is done when you can press down on each half.
- Quarter or half tomatoes.
- When spaghetti squash done, scrap out strands into a pot.
- Combine all ingredients in pot. Sautéed together until warm. Enjoy!
